小明简单料理:蚝油鸡
Chicken in Oyster Sauce
材料 Ingredients:

鸡肉 : 1只 (斩件,洗净备用)
1 whole chicken (cut & rinse)

葱段: 1把 (切小段)
1 bunch of Spring Onions (cut into length)

姜: 1块 (切薄片)
1 knob of Ginger (sliced thinly)

蒜头: 1把 (去衣,拍扁即可)
1 handful of Garlic (peel & flatten)

大黑木耳: 1把 (泡水,撕小块)
1 handful of Black Fungus (soaked)

冬菇: 1把 (泡水,去蒂)
1 handful of Chinese Mushrooms (soaked)

金针菜: 1把 (把硬粒拔掉,打个结;勤力泡水,换水,直到酸气味减低到你可以接受的范围即可)
1 handful of Kum Chum (soak & rinse well)

清水: 适量
Water to simmer


调味:蚝油,盐,味精 各适量。
Seasoning: Oyster sauce, salt & MSG.

做法:
爆姜片至干香,加入蒜头略微爆一下。
加入鸡肉煎炒一下,再把其他干粮倒入翻炒均匀。
加入适量清水和调味料继续焖煮鸡肉至软。
起锅前加入葱段即可。
**你也可以稍微勾个薄芡,滴几滴熟油来给彩色增加油亮的味觉挑逗哦! :)

Method:
Fry the ginger slices till brown, add in the garlic to brown it slightly.
Stir in the chicken to fry it slightly, then add in other condiments, mix well.
Add in water and seasonings to simmer the chicken till it's soft and tender.
Stir in the spring onions and serve hot.

**you may thicken the gravy slightly and add a few drops of oil to add in delicious visual effect to enhance your appetite! ;p
