电饭锅怎么啦? oh my rice cooker!!!


伺候我家多年的百变“老爷”电饭锅!

我的电饭锅怎么啦?
没怎么啊?哈哈哈。。。

最近好多人的询问。。。说电饭锅还可以变出什么菜色出来。。。。

好吧。。今天我就教你用电饭锅做一甜品一菜饭。


冬瓜茶

冬瓜 (2寸厚片) - 1 块
胖大海 - 12-15个 (浸泡后去掉核跟皮)
冰糖/清水 - 适量 (我用6公升水配900克白糖)

1) 把冬瓜籽去掉。果肉刨丝。果皮可以留着一起煮,增加香气。
2)将清水和冬瓜丝一起放进电饭锅里头开电煮滚。
3)加入冰糖调味。
4)加入胖大海伴均匀即可。

这冬瓜茶冷热


这个肯定不是电饭锅!是我用我家的百变汤锅煮的!

腊味饭

白米 - 4 杯 (预先洗净)
腊肠 - 2 条 (切片)
小堂菜 - 1把 (洗净;汆烫半熟)
芫荽 - 1把
辣椒片 - 少许
油葱 - 少许
老抽 - 1 大匙
鸡精粉 - 1 大匙

把白米,水和鸡精粉放进电饭锅里头伴均匀,盖起来,开电煮。
等水手干时,把腊肠铺在饭的面上,盖起来继续煮到电饭锅跳电。
把小堂菜加入,盖起来继续焖多5-10分钟即可。
吃时只需要淋上老抽,撒上油葱,辣椒和
芫荽就可以了。

染发DIY Hair Colouring

好久都没有染发了!
今天朋友刚好买了DIY染发剂,就被拿来做人肉模特儿小试一下下。

染出来的效果还不错哦。
因为本身的黑发是特别的黑,所以做不到包装盒上的金黄效果;
但至少把我的黑发变成些许的褐红色。。感觉我的头发突然柔和好多。。。。杀气没那么重了。

让爱川流不息。。。

现在接近晚上十点钟了。。。

一边用手机收听报业集团Radio1003的慈善广播节目,一边看新传媒八频道的慈善筹款电视节目。
两家或许有利益上冲突的公司,今天竟然可以为了远方的灾民而为慈善而碰头,实属空前。
平时各忙各的争取商业客户,今晚大家都放下身段一起共享盛举实数难得。也为之感动。

今天如果你错过收听或收看。。。。也挺遗憾的。

椰香绿豆小米粥 Millet & Green Bean Sweet Soup

这甜品是用我家的电饭锅煮出来的。
简单方便省事!
不过要记得,煮的时候不要盖,不然要是溢漏出来会流到底下内部,可能会引起跳电哦!

这甜品除了有椰香还能品尝到绿豆香呢。
可以热吃也可以冰镇享用。

椰香绿豆小米粥 Millet & Green Bean Sweet Soup
ingredient:
Green Bean : 300gm
Millet: 200gm
Gula Melaka: 3pcs

method:
rinse green bean & millet, soak in water for 1hr.
transfer into a rice cooker and cook for almost 1hr or until it becomes porriage-alike.
add in gula melaka to taste.

serve warm or chilled as desire.

材料:
绿豆:300克
小米:200克
椰糖:3个

做法:
首先将绿豆和小米洗干净,用水浸泡1小时。
然后用电饭锅来熬成粥。
加入椰糖调味即可。

冷热皆宜。
小米营养丰富,绿豆清凉解暑。
冰镇后更是炎热下午的清凉甜品哦!

Bing Bing

Bing Bing - a roughly 2 years old boy whom my 2nd mother is currently baby sitting. at Tampoi, JB.

BB: Gor Gor, i am hungry.....
XM: ok gor gor bring you out for dinner. but you have to put away your "doo-doo" ok?



BB: Yeah!! OK! i'm ready!!


My cousin is giving us a treat at Danga Bay, JB, at Danga Palace; serving chinese halal food in a clean comfortable environment, overseeing the sea at night. He reserved a total of 5 tables, in order to sit in everyone comfortably!

BB: ah mah, where's my food?
Ah Mah: ooi....... mai liao.... ("oh.... coming" in thai)


Si chuan sour spicy soup - not too starchy, mild spicy yet appetising sourly to taste.
i'd 3 bowls of these! - xm


chicken, battered and deep-fried till golden crispy on the outside yet juicy on the inside!
dip into a secret sauce with a strong punch of lemon juice..
wow! i insist on 3rd helpings! - xm



Crispy Red Tilapia in Assam Curry (Whole)
soury spicy assam curry attacking your hunger, making you even more hungrier!
soft tau pok with gravy soaked in! crispy tau kee! lady fingers! tomatoes!
not forgetting the fresh fish,
deep fried until so crispy you wish to chew the fish bones for calcium intake! -xm

Brocolli with chinese mushroom in oyster sauce.
crunchy brocolli just nice to add in some buffering before the next dish!
chinese mushrooms had been simmered in the sauce before serving, thus every bite into it will push out the sauce into your mouth and let you know.... it's oyster sauce! hahaha.... xm

Yee-mian - not too soggy yet tasty! if i haven't been eating too much, i wish i can squeeze in another bowl of it into my small tummy. -xm




for dessert we have longan tofu and special steam buns.
the bun is soft, the fillings as told, used salted egg yolk to fry with butter and seasonings,
that's why it's so creamy, a combine of saltish and sweet,
plus aroma of milk in your mouth. - xm


BB: ah mah and me, dinner is yummy!

BB: this fat Gor Gor, dont know why he go and buy a pot of chilli from Giant.
aiya he stay in singapore one! seldom come back.
now i have to water this plant for him.

mother's day 2008 母亲节

2008年的母亲节很特别。
今年除了把妈妈的农历生日,和外甥的阳历生日放在一起庆祝以外,
也邀请了外甥的女朋友,妈妈的朋友:刘牧师和她83岁的母亲一起和我们一起庆祝!

婆婆今年从香港飞过来新加坡探望女儿,由于年事已高,可能下一次。。。都不知道什么时候可以相聚呢。

婆婆只会说客家话,刚好来到新加坡朋友又不多,碰到我妈就特别开心!
因为可以在异乡找到同乡一起用客家话闲聊是多么开心的事情啊!

谁说佛教徒和基督教徒不能够一起庆祝啊?
今天我们不谈宗教,我们只管吃喝!哈哈。。。。

所有菜单是临时凑和的。因为之前我拟的菜单,因为很多材料都买不到而不得不作修改。幸好,还见得了人哟!

this year's, the mother's day celebration is very special.
apart from celebrating together with my mom lunar month birthday, my nephew 21st birthday.

this is also the 1st time guests are invited to join us on a happy occasions.

beside my nephew girlfriend, mag was invited, my mom's friend: pastor lau and her 83yo mother (we all address her as Po Po), specially flew over from Hong Kong to visit her daughter.
as po po's only verbal language is hakka, she was so happy to make friend with my mom.
cos my mom is the only one who can speaks hakka in the senior group gathering.

po po is old and she told us, she don't feel comfortable taking plane to travel around. so we all also don't know when we will be meeting up again.

the dinner menus was actually planned way ahead getting all heads nods before i can start to cook! but still... a lot of ingredients are not available last minute so changes cannot be avoided! ha ha ha ha.... lucky enough, everyone is happy through out the homely dinner.


明氏寿面
用鸡汤稍微焖了事先油炸过的面线,材料由蛋白,鲜菇,蒜头。
面线因为油炸后才焖煮就不会湖成块状,吃的时候面条都是条条分明,
还多了油炸香味呢!

XM's Longivity Noodle
deep fried noodle braised in chicken stock, accompanied with egg white, golden garlic, fresh mushrooms.

有点像宫保的宫保鸡丁
哈哈。。。从没有煮过宫保鸡丁。只是略微模仿它的味道。
我用了鸡腿肉,辣椒干,冬笋,马蹄,青红黄灯笼椒。
调味我加了辣豆瓣酱,香醋,糖,鸡精粉和少许老抽调色。

嗯。。少了蒜头,花椒和腰豆!

烧肉焖白菜
我的经典小菜。大白菜今天遇到焖烧肉。
那菜可是甜到。。。。

当然我还做了红鸡蛋给我外甥,早上还做了3公升的甜品。
冷藏甜品是冰花马蹄露。。。对不起。 甜品不够吃!哈哈。。。。

芹菜鸭丝 + 竹蔗鸡汤

今天临时叫了我大姐跟我一起录节目!
从冰箱挖出一些材料之后才来决定设计怎么样的晚餐。哈哈。。。

所以就出现了今天的。。。


芹菜鸭丝

芹菜有降血压的疗效哦。
小辣椒和红萝卜的维生素A丰富呢。
蒜头提香也有保健的作用。


材料:
红萝卜丝 - 1 小条
卤鸭 - 半只 (去骨,切丝)
豆芽 - 150克 (去尾)
芹菜 - 1整棵 (叶子留来煮汤,把粗纤维炮掉,切片)
蒜头,小辣椒 - 适量

调味:
鸡精粉 - 半汤匙
香醋 - 1 - 1.5汤匙
水 - 少许

做法:
用少许油爆香蒜头和小辣椒。
加入鸭丝,红萝卜丝和芹菜片翻炒。
加入豆芽和调味翻炒片刻,均匀即可。


Celery and Duck Stir Fry


Celery is known to be able to reduce high blood pressure.

Chilli and Carrot are rich in Vitamin A.

Garlic are good for health too.


Ingredients:
Carrot - 1 small piece, shreds it.
Braised duck - 1/2 duck, remove bones and cut into thin shreds.
Bean sprouts - 150gm (remove the tail)
Celery - 1 whole (remove the coarse fiber skin, cut into thin slices. keep the leaves for the soup)
Garlick & small chilli - a handful

Seasonings:
chicken powder - 1/2 tbsp
Fragrance Black Vinegar - 1 - 1.5 tbsp
water - a dash

Method:
Fry the garlic and chilli with oil till fragrance.
add in duck shreds, carrot shreds and celery slices.
lastly add in bean sprouts and seasoning, stir and mix well. serve hot.

竹蔗鸡汤
竹蔗有清热结束的疗效。
鸡肉补充蛋白质。
鸡汤滋润身体。
萝卜使到汤味更清甜。

材料:
竹蔗 - 4-6 条 (切半,再切小段)
红萝卜 - 4-8 条 (小型)
鸡 - 1只 (中型)
水 - 适量

调味:
鸡精粉 - 少许

做法:
鸡肉切块,飞水后备用。
将水煮滚后,加入竹蔗和萝卜,还有之前的芹菜叶一起熬煮1个小时。
加入鸡肉继续煮多10分钟或鸡肉熟了即可。
如果口味重可以加少许鸡精粉调味。

Bamboo Cane Chicken Soup

bamboo sugar cane are meant to have a cooling effect for heaty body.
chicken meat provide proteins supplyments,
and the chicken soup is equally nourishing.
carrot add some sweetness to enhance the taste of the soup.

Ingredients:
bamboo sugar cane - 4-6 pcs (cut half, and cut into smaller length)
carrot - 4-8pcs (small size)
chicken - 1 whole (medium size)
water

seasoning:
chicken powder

method:
cut up the chicken, cook briefly in boiling water, remove from the water the moment it changes to grayish colour. set aside.
boil a fresh pot of water, add in bamboo sugar cane and carrot, and the celery leaves, boil for an hour over low flame.
add in chicken and cook for another 10 minutes or until the chicken is done.
add seasoning if desire. serve hot.

凉面DIY Cold Noodle

凉面DIY Cold Noodle

面和配菜 (预先准备好后;个别分开冷藏):

白玉面 (按照包装上的指示煮熟后,过冷河沥干备用)
红萝卜丝
黄瓜丝
本地芹菜末
芝麻 (预先炒香)

酱汁 (预先伴好后再冷藏):

香醋
日本凉面伴酱
辣油 (可以不加)

吃的时候,把配菜摆在面上,淋上酱汁即可。

noodle & condiments (prepare in advance and set in chiller):

white jade noodle
(cook according to instructions on the packaging. when cooked, quickly immerse in ice water to reduce the temperature; drain well)
carrot shreds
cucumber shreds
chopped chinese celery
white sesame seeds

dressing sauce (prepare in advance and set in chiller):

fragrance vinegar
japanese cold noodle sauce (available in Daiso or other jap product store)
chilli oil (optional)

before serving, arrange the condiments on the noodle, pour the dressing over it and serve immediately.
